Program Overview

Our Culinary Arts program combines strong theoretical foundations with extensive hands-on training over three years. It prepares students for immediate employment in the industry or serves as a solid pathway to further education, with real-world experience gained through partnerships with local businesses and catering events. The curriculum covers a wide range of topics, including global cuisines, baking, culinary techniques, food safety, and restaurant operations. Students develop both technical and soft skills, such as knife handling, problem-solving, equipment use, menu planning, and customer service, giving them broad career readiness.

The FCCTI Culinary Arts program has been certified by the American Culinary Federation Education Foundation (ACFEF) Secondary Certification Committee. This certification indicates a commitment to excellence by meeting industry-established standards, knowledge, and competencies. Skills

  • Maintain the cleanliness of work areas, equipment, and utensils

  • Properly store and handle food to prevent spoilage

  • Prepare and cook various foods following procedures and dietary needs

  • Portion, package, and serve food for dine-in or take-out

  • Operate food warmers and refrigeration units appropriately

  • Monitor inventory and report supply or equipment issues

  • Weigh, measure, and prep ingredients for cooking

  • Support kitchen staff with tasks and supply needs

  • Clean and inspect kitchen tools and appliances

  • Maintain food usage and expense records

  • Supervise and direct food service assistants
